ūüć≥Scotch Eggs: You’re welcome!¬†

This is one big ball cut up in 4. It is a scotch egg. It has nothing to do with Scotland, even though it is a British staple dating back to 1743 where it was known as a pocket dish to fill you up and take to work.

The traditional Scotch Egg has an interesting history and the first recipe, back in 1802, called for leftover meats, a boiled egg, and a fried top. Today, they are made with sausage, boiled eggs, and low  carbers use coconut flour to bind them.

Suffice to say, this is my favorite food. It only takes ONE to fill you up and it’s moderate in calories. Make them yourself! Or get them at the appetizer section of your local Brit pub. Irish pubs may not carry them but Scottish and English will . ENJOY!!! #scotcheggs

Salad Shooter

Suppose you hate chopping and cutting too. Make it fun with an automated chopper that will make veggies easier to eat than ever. Kids will love eating their cucumbers in shapes and disks, rather than in choppy chunks. Give it a try. Mine did wonders too, look below!

Soda makers

fizz_pink_web

I cannot stress enough how useful these are. I keep one at work and one at home. I can go through two liters of water per day with just a bit of a fizz and flavor, thanks to these inexpensive and super cool contraptions. Get one and see for yourself how easy it is to drink water this way.

Think about this: This meal was made with at least 3 of the gadgets I have just shown you. Who says a good meal can only come from a restaurant? By the way, this was the chicken bourbon with quinoa and kale (OMG) from Gordon Biersch in Buckhead, GA. The best.

How to drink those 8 glasses of water a day!

Drinking water can be fun! Even 8 glasses a day! Plan your day ahead, and it may actually be worth trying!

1. TAKE A WHOLE GLASS WITH YOUR DAILY VITTIES

IMG_5583

Get a whole glass in when taking meds or vitamins. Take that chance to take an entire 8oz in, or take it into two gulps of 4oz.

2. MAKE A MOCKTAIL

Screen Shot 2016-02-29 at 9.42.31 PM

Add lime, mint and a dash of raw sugar to fizzy water, decorate, and have as many as you want! Hey, they are safe for work!

3. CHANGE THE GLASS

IMG_5585

Sometimes the idea of a “glass” of water sounds boring. Then, change the glass, make it look cool. Make YOU look cool.

4. FAKE A SODA

Screen Shot 2016-02-29 at 9.47.38 PM

Can u say cherry limeade? Just look up natural flavors and mix them up. Add a straw! Add a little umbrella. Make it creative!

5. GET YOUR FRUITS INVOLVED

Screen Shot 2016-02-29 at 9.43.20 PMMix and infuse whatever you got! Powders, fruit, anything to make water worth your taste buds.

6. MOCKTINIS!

IMG_5572

Have one, have many! Sometimes a bit of variety is what people REALLY need.

7. LET ONE OF YOUR “8 GLASSES” BE A TEA INFUSION OR A WATER-BASED DRINK

BALI

A bit of fooling around is still better than a LOT of fooling around with sodas! Slimming juices are the best choice!

8. COCONUT WATER: SWEET, HYDRATING, DELICIOUS

Screen Shot 2016-01-20 at 9.47.47 PM

9. EAT PHO! (OR OTHER BROTH-BASED MEALS)

Screen Shot 2016-03-20 at 9.48.51 PM
Soups and broths do count to your total hydration experience. A huge pho can be made with up to 3 cups of water. Go low on the salt, and high on the flavor.

THERE IS NO EXCUSE NOT TO GET YOUR WATER IN! IT HAS NEVER BEEN EASIER!

    IMG_5582

For some of us, drinking the water that we need¬†does not come easy. These¬†are some ways to make non-drinkers into habitual drinkers…of water, that is!

Snack Attack Series: Today’s Faves!

These are more than just snacks: They are energy for life!

Here’s some¬†I found today!

Stuffed Clams! (As seen at Publix)

Visit the seafood aisle every once in a while (unless you are allergic, of course) and check out what they have made on the “take to go” stand.

Screen Shot 2016-02-21 at 9.08.21 AM.png

One stuffed claim may contain breading but check the facts. One of these is big enough to eat as a snack, with the same calories as a bag of chips but much more satisfying (and goes great with super hot sauce)

 Ready-made Caprese: ZERO CARB THIRTY

Fresh tomatoes, fresh mozzarella slices, and dark greens are awesome BREAKFAST and SNACK choices!IMG_5357

Slip the cheese between two of the tomato slices, and cut in half. Then, dip on the balsamic vinegar. You should get about 15 small pieces to snack on all day if you are smart about sectioning these “sandwiches.

RockIT Apples!

IMG_5342

IMG_5344 2

The disclaimer of this product says that eating one tube of it will give you your daily fruit blast. I looked at them closer. They are very small, cute, and crunchy-looking apples at 50 calories each. That is only 150 off your calorie budget and all-natural. I will give it a try and let you know. ¬†The packaging…well, rocks.

Say HI to plantain chips!

MOVE OVER POTATO CHIPS. The plantain is a cousin of the banana. They are SALTY, CRUNCHY and WAFER-THIN.

IMG_5346

Screen Shot 2016-02-20 at 4.45.42 PM

This is what they would look like outside of the bag. YUMM-OOOOH!!!!  AND LOADED with potassium, too!

platanutres.jpg

The calorie content is not that bad, either. Look at the facts.
Not too bad! Keep your carb intake low for the rest of the day in exchange for  good dose of Vitamin A and some Iron, contrary to potato chips which have ZERO nutrition value.

For the carbohydrate-ly challenged!  Pre-packed turkey legs!

ZERO CARBS, full protein, and deliciously ready for a quick nuke in the microwave. Here are the fats for one of these legs. Keep in mind, one leg can help make many meals, not to mention stock from the bone. For less than 7$? Not a bad deal at all!

IMG_5351

Note from Roger Wood site:

Please cook to an internal temperature of 165¬įF to ensure safety.

NOW- BE CAREFUL when reading the nutrition facts. There is MUCH MORE than 15oz in a turkey leg, so plan accordingly!

Lactose-Free cottage cheese!

I just found this to be amazing since I happen to be totally into CC.

IMG_5353

It is essentially the same amount of calories as a small cottage cheese container, which is usually 1/2 cup = 80 calories,  7g carbs (not too bad) and 380 mg sodium, so watch that one.

IMG_5352

The Green Coke: Coca Cola “Life”

Since I was offered this as an option at an upscale restaurant in the nice part of Atlanta, I will go ahead and add it as a “finding.” Check out the nutrition facts and decide if this option is allowed in your plan.

IMG_5350

1 small bottle (8floz) is 60 calories (versus the usual 150 plus). Carbs are at 16g and sodium is 25mg. I would think if the struggle is very real, have one.

Quinoacalypsis! OMG these saved my life

This is the easiest way to eat ready-made quinoa! And it is not pricey, either!

How to Hide Your Veggies (so you don’t know that you are eating them)

Can you see them?

Screen Shot 2016-02-15 at 5.27.15 PM

Find ways to hide vegetables in daily meals so that you can get your full 5 servings painlessly!

1. Get camouflage foods!

What do spaghetti squash and shirataki noodles have in common? TWO servings of veggies per meal that make PERFECT NOODLES without flour or starches! Add your favorite extras, and get the veggies in!noodz

Cauliflower fakes any starch, from rice to noodles. Stir fry veggies are the easiest to hide and texturize like noodles. Veggetti, anyone?

Screen Shot 2016-02-15 at 5.21.44 PM

2. Veggie Patties DO count!

Screen Shot 2016-02-15 at 6.54.35 PM

Veggie patties are made of anything, from black beans, to tofu. Load up the pattie with pico de gallo, avocado, and your typical lettuce/tomato, and you will have 2 to 3 servings of easy- eaten veggies …and then some more!

3. STICK THEM IN SOUPS!!

Not just vegetable soup! Check out this creamy chicken veggie soup by the healthyfoodie.com!

Creamy-Chicken-and-Vegetable-Soup-1.jpg

Add veggies to chicken soups, bisques, egg drop, hot and sour, and all things “wet.” Add them to stews (and make sure you eat them.)

4. COOK THEM IN CASSEROLES

Remember my four-step Spinach Maria?

Screen Shot 2016-02-15 at 7.09.52 PM

Spinach Maria, quiche, cauliflower “mac and cheese” are all ways to eat vegetables hidden in foods. Do not cook them “ad nauseam.” Keep it as simple as possible but make sure to include them.

5. LOOK AT PALEO PLANS FOR GREAT SALAD IDEAS

Screen Shot 2016-02-15 at 5.20.56 PM
Go veggie crazy

They add fruits, veggies, nuts, legumes, and all things nutritious. The best thing is, zero junk with croutons nor salad dressings that do more damage than anything.

6. EXPLORE WITH BALSAMIC VINEGARS

vinegars

OMG! THIS is MY FAVORITE balsamic, like EVER!!!!! From Blackcurrant to hot cherries, balsamic vinegar comes in all colors, textures, and flavors that would make even the more insipid lettuce head taste SUPER hot.

7. WITH WRAPS AND PIZZA, KEEP THE BREAD LOW AND THE VEGGIES UP

sandwiches

Nothing wrong with wrapping it up. Just make sure your veggie to carb ratio is way higher. Stuff that wrap and add mustard and other deliciousness.

8. MAYBE TYPICAL VEGGIES BORE YOU. EXPLORE RARE ONES!

Screen Shot 2016-02-15 at 6.11.13 PM

This salad has cactus, beets, and uses mango as a sweetener. The cactus are the green things that look like green beans. Just saying that you ate cactus may make you feel cool. Hey, its a vegetable. Try it!

They are: 1)¬†zero¬†grams of Trans Fat, 2) No Artificial Colors or Flavors, 3) No Preservatives, 4) Gluten 5) Free Ingredients, 6)¬†All Natural Recipes, 7) Simple Ingredients and Simply Delicious. Very tart. Very delicious. BE CAREFUL not to drink too much of it, as it is a cleansing juice. This means that if you have any issues with detoxing, this is the juice for you.¬†There is another brand of Indian River, as not all the juices of the brand carry the “ultra slimming” label. I find them all quite delicious, myself.

5 Reasons why Cauliflower Rocks

Far from the big, bushy pale vegetable, cauliflower can be made into anything, from pizza dough, to rice. Ever heard of carb-free, low-cal breadsticks? Stick around and read some more.

#1 BEST #lowcarb pizza dough and breadsticks ever

This crispy, golden crust is made with seasonings, egg whites and one cup of pulverized cauliflower florets. Mix all together, season as you wish, and bake in the oven at 350 for 20 minutes.

Add cheese, or your favorite toppings, and voila! 25 calories per cup, plus 35 calories per 2 egg whites make a VERY low calorie, virtual zero carb bread!

cauliyummo

2. It¬†makes the best “potato” casseroles

Shred the cauliflower heads (prior to steaming) in bigger bits when imitating pasta and potatoes, and finer bits when substituting for rice. Make it as thin as possible for breads. This ham and cheese “hash” was baked and then broiled at the top after adding extra cheese!

Cauliflower takes the likeness of potatoes, pastas, and rice. All starches become NON-starches

3. Who needs rice??

When you shred cauliflower to a medium cut, all you need to do is steam it for just 2 minutes in the microwave, then mix with with the rice toppings that you want on a skillet. IMG_4531

After all is evenly cooked and mixed well, you can choose to bake all together for around 20 minutes. Check out my “mac and cheese” recipe. Same process. Delicious!

4. Bisques and soups are thicker with powder-thin cauli

When you add powdered cauliflower to any stock, broth, or clear soup, you can add more ingredients to get a thicker, creamier consistency. It is like a secret weapon that needs no starches or carbohydrates.

5. They rock as fritters, for dipping, and as snacks

Once you get good at learning how to properly shred it, the sky is the limit for you. Try cauliflower and swap today. You will never make a better choice for your health, and your diet!Screen Shot 2016-02-07 at 7.36.31 PM

Paleo or Whole30: Which one is for you?

30PAL.jpg

Paleo vs Whole30?

#Paleo, re-created and promoted by Dr. Loren Cordain and #Whole30, created by Melissa and Dallas Hartwig, are two awesome nutritional plans, but they are not the same. Learn here which one is best for you!

KEY  SIMILARITY:

THE PREMISE- EAT REAL FOOD

cass
DietChica’s shirataki casserole pre-cooking
  1. 1. Both diets avoid:  preservatives, sugar, dairy, wheat,  grains and legumes.             2. Both diets what you to: Eat things that are not packed, frozen, canned, or bagged. 3. THEY ARE BOTH LIFESTYLES, NOT JUST DIETS.

DIFFERENCES:

  • WHOLE30 IS A 30-DAY RECONDITIONING PLAN TO RE-LEARN HOW TO EAT FOOD PROPERLY.
  • PALEO IS A DAILY SUBSTITUTION PLAN BASED ON RECREATING THE EATING HABITS OF THE STONE AGE PERIOD¬†

Whole30: You get 30 days to flush out diet cravings, bad snacking, and bad food choices using their list.Whole30 is a reconditioning plan. Screen Shot 2016-01-30 at 10.22.16 AM

Paleo: you can still eat snacks–as long as you use the allowed list.¬†Paleo is a daily substitution plan

Screen Shot 2016-01-30 at 10.25.02 AM

 Key RULE:

No grains, no legumes, no dairy, no wheat, no sugar

PALEOBOOK
Still looks pretty good to me!

Big difference #1: Salt and Potatoes

#Whole30 now allows potatoes. Not French fries, but potatoes. SALPO

#Paleo does not allow potatoes, or any other starches, because, historically, cavemen would have not eaten them, which is the premise of Paleo.

Salt is another difference. Paleo allows sea salt in the allowed foods list, but Whole30 does not.

Big Difference #2:  Booze

Screen Shot 2016-01-30 at 10.17.08 AM.png
DietChica’s “Boyfriend Mojito”

Whole30 is a zero alcohol diet.

Part of reconditioning the brain to learn to eat well again includes ridding the body of foreign substances, such as alcohol and other things.

In Paleo, you can drink alcohol, as long as it is alcohol with no sugar added, or distilled from grain.

Rum is allowed. Whiskey, and some kinds of vodka, are not.

Wine is also allowed in Paleo, as long as it is Sauvignon Blanc (driest white), Brut Champagne, or dry red wine.

Keep in mind: Wine spritzers, beer, and mixed drinks are strictly off limits from Paleo.

Big Difference # 3- Snacking and substitutions

Whole30 is a reconditioning program, so you are asked to eat food “as is.” Snacking is not allowed because snacking is eating food assuming that your body is depleted of nutrients.

Screen Shot 2016-01-30 at 10.43.05 AM

The premise of the diet is that, if you are eating the right things all the time, snacking will not even be necessary. Your boy will remain nourished throughout the day.

In Paleo you can eat what you want, and when you want it, as long as you do not deviate from the allowed food list.

Substitutions are essentially what the Paleo diet is about: Substituting fake food with real food, even if it is in the form of a “paleo” chicken nugget.

Big difference #4: Honey!

honeyjar

In Whole30 sweeteners are not allowed in any form, not even sugar substitutes that claim to be natural.

Fruit juice (natural) can be used as a sweetener.

In the Paleo diet plan, honey is the preferred method for sweetening foods and recipes.

Raw honey, that is.

Which plan would work best for you?

Shoot me a line and let me know what u think!
