Bagels and Lox Keto Bombs. It happened!!!

Today my demonic hormones indicated that I wanted this:

NA, GIRL. If I eat a bagel AT THIS POINT, I will go into a self-induced glucose attack from hell. I haven’t consumed carbs in over a month now. No way I can eat this crud.

So I found a recipe for a keto bomb based on:

  1. lox
  2. cream cheese
  3. bagel seasoning    BALL

SO I USED:

  • 2.5 TABLESPOONS cream cheese
  • 2 oz sliced salmon (lox, yumm) (that’s half a pack)
  • some chopped chives

And I was like, how am I going to bind this together without adding cream cheese? WELL, HERE ARE THE SAVERS OF THE DAY!

Turns out, 2 tbsp Parmesan binds together the cream cheese and lox like a DREAM. It serves as a wall, sort to speak.

AND….Trader Joe’s owes us an apology:  Mrs. Dash Chicken TASTES EXACTLY THE SAME as the “everything bagel” seasoning. Glad I saved me a trip to Atlanta to get it.

So:  I mixed it all together in the mixer, low level. Then filled a basic container with Mrs Dash. Made 9 balls, rolled each in the mix, and KABOOM!

 

 

Basically, you eating the good stuff in the bagel, PLUS the seasoning: without the bagel. I call this a WIN.

I am cooling them overnight because I plan to eat them all tomorrow.
