Find ways to hide vegetables in daily meals so that you can get your full 5 servings painlessly!
1. Get camouflage foods!
What do spaghetti squash and shirataki noodles have in common? TWO servings of veggies per meal that make PERFECT NOODLES without flour or starches! Add your favorite extras, and get the veggies in!
Cauliflower fakes any starch, from rice to noodles. Stir fry veggies are the easiest to hide and texturize like noodles. Veggetti, anyone?
2. Veggie Patties DO count!
Veggie patties are made of anything, from black beans, to tofu. Load up the pattie with pico de gallo, avocado, and your typical lettuce/tomato, and you will have 2 to 3 servings of easy- eaten veggies …and then some more!
3. STICK THEM IN SOUPS!!

Add veggies to chicken soups, bisques, egg drop, hot and sour, and all things “wet.” Add them to stews (and make sure you eat them.)
4. COOK THEM IN CASSEROLES
Remember my four-step Spinach Maria?
Spinach Maria, quiche, cauliflower “mac and cheese” are all ways to eat vegetables hidden in foods. Do not cook them “ad nauseam.” Keep it as simple as possible but make sure to include them.
5. LOOK AT PALEO PLANS FOR GREAT SALAD IDEAS

They add fruits, veggies, nuts, legumes, and all things nutritious. The best thing is, zero junk with croutons nor salad dressings that do more damage than anything.
6. EXPLORE WITH BALSAMIC VINEGARS
OMG! THIS is MY FAVORITE balsamic, like EVER!!!!! From Blackcurrant to hot cherries, balsamic vinegar comes in all colors, textures, and flavors that would make even the more insipid lettuce head taste SUPER hot.
7. WITH WRAPS AND PIZZA, KEEP THE BREAD LOW AND THE VEGGIES UP
Nothing wrong with wrapping it up. Just make sure your veggie to carb ratio is way higher. Stuff that wrap and add mustard and other deliciousness.
8. MAYBE TYPICAL VEGGIES BORE YOU. EXPLORE RARE ONES!
This salad has cactus, beets, and uses mango as a sweetener. The cactus are the green things that look like green beans. Just saying that you ate cactus may make you feel cool. Hey, its a vegetable. Try it!
