5 Reasons why Cauliflower Rocks

This crispy, golden crust is made with seasonings, egg whites and one cup of pulverized cauliflower florets. Mix all together, season as you wish, and bake in the oven at 350 for 20 minutes.

Add cheese, or your favorite toppings, and voila! 25 calories per cup, plus 35 calories per 2 egg whites make a VERY low calorie, virtual zero carb bread!


2. Itย makes the best “potato” casseroles

Shred the cauliflower heads (prior to steaming) in bigger bits when imitating pasta and potatoes, and finer bits when substituting for rice. Make it as thin as possible for breads. This ham and cheese “hash” was baked and then broiled at the top after adding extra cheese!

3. Who needs rice??

When you shred cauliflower to a medium cut, all you need to do is steam it for just 2 minutes in the microwave, then mix with with the rice toppings that you want on a skillet. IMG_4531

After all is evenly cooked and mixed well, you can choose to bake all together for around 20 minutes. Check out my “mac and cheese” recipe. Same process. Delicious!

4. Bisques and soups are thicker with powder-thin cauli

When you add powdered cauliflower to any stock, broth, or clear soup, you can add more ingredients to get a thicker, creamier consistency. It is like a secret weapon that needs no starches or carbohydrates.
